What is Guar Gum
- Origin: It is primarily the ground endosperm of guar plant (Cyamopsis tetragonoloba).
- Production: Separation and pulverization of the endosperms of the seed (Cyamopsis tetragonoloba).
- Basic elements: D-Mannose, D-Galactose.
- Galactose/Mannose-Ratio: average 1:2.
- Glycosidic bond, β-1,4 (main chain), α-1,6 (short Galactose side chain).
Main properties
- Guar Gum is a non ionic polysaccharid.
- Guar Gum solutions show pseudoplasticity.
- The viscosity increases very fast.
- Guar Gum shows a fast development of the viscosity.
- Gura Gum is compatible with all monovalent and most bivalent ions.
- Guar Gum develops high viscosities within a large pH area.
- Guar Gum shows a high water-retention.
- It is possible to convert Guar-Solutions in water-resistant gels, under acid as well as under alkaline conditions.
- Even low amounts of Guar enable a smooth squeeze of humid mixmaterial with low pressure.
